My 0% Fat free vegetable soup


Soups are a great way to use up remaining vegetables, easy to whip up and the best is, you can make a
batch and freeze it. 
It’s great for all the family……the kids get their veg in and we get a fat free yummy soup!
Here is the easiest, quickest fat free soup! I make it regularly:


Ingredients:
  • 2 medium carrots
  • 1 medium parsnip
  • 1 medium courgette
  • 1 large onion
  • 1 green pepper
  • 1 large clove garlic
  • 5-10 mushrooms
  • 1 vegetable stock (I use marigold yeast/gluten free veg bouillon)
  • 1 tin chopped tomatoes

Recipe:
  1. Chop up all ingredients
  2. Put all into large pot/skillet
  3. Add stock cube mixed with H20
  4. Bring to the boil
  5. Boil on low-med heat for 1 hour
  6. Liquidise!

This will make a thick soup.  You can liquidise it in batches, adding a little water each time.
